My daughter loves kale!
She loves to eat it raw (after it’s been washed), lightly steamed, or cooked.
Saturday, the day before we made our homemade pizza, I decided to make a vegetable salad with kale being the main ingredient. She was thrilled. I chopped up some vegetables; carrots, tomatoes, onions, garlic and sweet red peppers. All the produce (with the exception of the carrots) came from our garden.
I put the vegetable salad into a glass storage container and put it in the refrigerator. I thought it would be perfect for a salad, snack or sandwich fixings. My daughter promptly made the above veggie sandwich. She took a picture and asked me to put it on my website. I promised her I would. Next time, I’ll tell her to open the sub or at least turn the sub so people can see all the veggies crammed between the sandwich bread.
Yummmm!!!! I love sandwiches with special filling – not jam, not peanut butter. Hmmm…maybe I can think about making a vegetarian one one of these days.

@suituapui, We do too, I occasionally eat bread. I normally tend to avoid it because of the nasal congestion that accompanies bread consumption. However I’ve found sipping pau d’arco tea, if I should indulge and eat bread, eliminates those symptoms.

Can’t go wrong with a Veggie Sub! YUM!
I have been craving Kale – more specifically a Raw Kale Salad with Tahini/Dill/Agave Dressing massaged into it! I’ll have to do that soon!
