Vegan: Dhal and brown rice with a ginger honey garlic sauce

I love Indian food, over the years I’ve created numerous vegan and non-vegan dishes.  When prepared for others, I don’t have any complaints. Earlier today I prepared this wonderful dhal. The brown rice and the honey garlic and ginger sauce that was made yesterday, was added to the dish. It was simple, delicious, and nutritious.

Dried lentils

Dhal is a thick soup usually prepared from lentils. However,  I’ve also seen it made from peas or other dried beans. I make mine with lentils. Dhal makes a delicious base for the numerous types of dhal that I prepare. Dhal is commonly served with flatbread and over rice.

Today, I didn’t make any chapati (Indian flat bread which is quite simple to make) but I did add a twist (to the way I normally prepare this dish) I added a sauce. I have leftover dhal and rice, so perhaps I’ll make some chapati tomorrow?

With my old site, VeganMomma, dhal was one of the most popular dishes I’d make. Those posts received a lot of hits! It also brought about some interesting discussions from the various food bloggers that would stop by and comment about the types of dhal they prepared ( a few were from India) or eaten at restaurants. On that site, when it came to food I only wrote about vegan food. However the majority of my commentators were non-vegan.

I place Dhal in the ‘comfort food‘ category, simple, flavorful, and oh so satisfying.

Morning adventures; photography and breakfast

I’m an early riser (usually awake by 3:30) because of this, I’m able to see some beautiful sunrises, this is what I saw this morning, and so I wasn’t disappointed. While my daughter slept, we took some time and watched as the world became lighter. I took plenty of photos, but am only sharing two.

Mr. Bentley (our Shih Tzu) is usually my companion on my brief adventures. I have to take him out to do his early morning constitutional. Afterwards, he usually pads along beside me, tongue lolling out of his mouth…

Stella dora lily

This is one of our stella dora lillies. As much as I want to hold on to winter a bit longer (and get that snow that never made an appearance) it looks like Spring is just around the corner. Our garden has been prepped; soil raked, stakes pulled, and ground tilled in preparation for the planting season.

Breakfast stir fry

Breakfast was made, and was eaten by my daughter a few moments ago. She said it was great. The meal was simples… pink beans and stir fry vegetables; cauliflower, potato, carrots, garlic, herbs, and other seasonings. Simple, nutritious, and delicious.

Vegan: Sauteed collard greens with tomatoes and red beans

As I mentioned in my cravings post, I’ve been craving more greens than normal. This morning I went out into the garden and picked about 4 cups of collard greens.

I have about 3/4 acre of garden, and enjoy eating regular produce during the harvesting seasons.

In the above picture you might not be able to even see the red beans. The tomatoes got in the way. 🙂 I love colorful dishes, and I definitely had that going on with this simple but delicious meal.

I don’t purchase canned beans. I prefer using the dried beans. I soak and cook a large batch of beans at once. In doing this, the beans tend to last me throughout the week. I just put the beans I’m not going to use in my Pyrex glass storage containers (I don’t use plastic storage containers) pop them in the refrigerator or freezer and bring them out when I’m ready to use them.

Did the overabundance of greens satisfy my greens craving? No, I’ll be picking more greens later today (for some green smoothies.) Tomorrow morning, I’m sure I’ll be picking more collards or kale to add to whatever dish I decide to prepare.
