Dehydrating food

The warmer months are a great time for me to dehydrate a variety of fruits and herbs.

If you were outside our home, you would see a numerous herbs and other plants spread out on stainless steel trays. I use them for seasonings and some our used to boost my health. Using the sun rays, I’m able to dry the produce. No need to worry about insects bothering what’s spread out, since the items being dried are also insect repellents. Now with other dehydrated foods, I’d need proper covering. Foods such as; banana chips, fruit roll ups, yogurt, vegetable chips, onion rings, come to mind.  If you don’t want to have an insect party,  it’s wise to keep them covered or bring them inside where the only pests you have to worry about are the human and perhaps pet variety. Cold weather is another reason to dry your food inside.

How do you dry foods inside the home? You can use your oven or a food dehydrator. About nine years ago I purchased a 9-tray Excalibur food dehydrator. It seemed to be a tool that many of those that were ‘raw foodist’ who also wanted dehydrated foods seemed to used. While many sang praises for this dehydrator I was never as impressed with it. For starters it was made out of plastic. I don’t have too many objects that come in contact with my food that are made out of this material. Also, the trays seemed especially flimsy. I wanted something that was a bit more durable, but it held nine trays which was perfect for dehydrating herbs and a variety of garden produce. I chose the Excalibur, because the stainless steel dehydrators that I was looking at were much more than I wanted to spend at that time.

When my daughter was a toddler, I found myself not using my Excalibur dehydrator as much and so I sold my dehydrator. Thankfully, I was easily able to sell it on Ebay for almost the price I’d purchased the item a few years before! Mine was in excellent condition, I also had 9 teflex sheets and had even held onto the original box.

Since that time I have had used a smaller metal dehydrator (which I’ve quickly outgrown I might add) so now it’s time to upgrade.

Fast forward to now, and I’m ready to do a lot of dehydrating once again, after a lot of research, I’ve settled on the TSM Stainless Steel Food Dehydrator with 10 Stainless Steel Shelves. As the description states, it’s made out of stainless steel and it’s made in the United States. It took a while to narrow down my search. I was impressed with the customer service for TSM aka The Sausage Maker and was pleased to see they are located in New Jersey, and I believe they have another location in New York.

I’ll still be dehydrating food, until it arrives. I haven’t made the purchase yet. Until that time, I’ll simply go back to my ‘old way’ of drying food inside during the cold months. I’ll be using the oven. I’ll be sure to post some recipes and how I go about doing that sometime this weekend.

Apple ginger lemonade and no pizza cravings…

Today after church, my daughter had a play date at our house.

I prepared a pineapple, apple, mango and grape juice for her and her friend and they devoured the juice along with the homemade pizza I prepared for them. The pizza looked amazing but you know something I didn’t have any at all. Take that, candida!

What happened to the juice?  It did the famous disappearing act. I was a bit disappointed, since I was planning on taking a picture of that, but they consumed it before I could get my camera.  Lesson learned… take the picture before you tell them that their juice is ready. I must say, that I’m thrilled that my daughter’s friend like the juice she’s a very particular about what she’ll consume.

A few days ago, I made a juice blend that I call Apple ginger lemonade.  It’s not too sweet,  the two lemons bring in the tart and ginger rounds it out with a bit of spice. We love that! Fruity drinks aren’t something I normally make for myself. Those who know me, know that when I’m juicing I mainly consume dark leafy greens, in fact some might call my drinks bitter. However I’ve gotten used to them and actually crave them.

The past week or so I have taken a detour and have been including freshly juiced sweet drinks, such as the one above. It was interesting to read what Dr. Morse had to say about fruit and candida and I must say my candida didn’t go haywire when I did occasionally juice only fruits for my drink. Despite consuming fruit drinks made with my juicer, I was still expelling candida, based on some candida experts this should not be happening at all. Interesting indeed…

You know, I’m betting the drink below would make an awesome natural soda. What do you think?

  • 8 apples
  • 1 cup spinach
  • 2″ ginger
  • 2 lemons

Directions

  1. Juice all produce
  2. Serve and enjoy

All the produce used are high in anti-oxidants, the spinach supplies iron, calcium, vitamin C, Vitamin A and numerous other nutrients that our bodies crave. So what are you waiting for? Start juicing! It’s a delicious way to combat the common cold and other ailments , so consider adding this to your juicing routine.

My daughter loves this juice and I’ll definitely be adding it to the frozen fruit pops I make for her when the weather is a bit warmer.

Guess what? They’re calling for more snow today, in fact the temperature has been steadily dropping! Whee!

 

 

Random thoughts during this lenten season…

I do believe the reason why I have not made any lenten commitments within the past two years that I’ve been a member of my Lutheran church is that I make commitments and adjustments throughout the year. However seeing my members of my church family post what they were doing on Facebook got me into the spirit (I guess) and I came up with a few ideas of my own. The physical I already mentioned in a prior post and spiritually, I’m making a concerted effort to expand my time of prayer and being thankful in all things. This is something that isn’t going to end when the lenten season is over, but it will continually be something I incorporate from now on.

Being thankful has been on my mind a lot.  I guess I’m thinking about it more because of all the unexpected things that have happened this winter; the unexpected loss of my honeybees, the delay in the planting season, the massive dent in our woodpile because of the cold weather which meant cutting down more trees, sawing them into appropriate lengths and stacking them onto one of our woodpiles, the car heater that stopped working when it was below 0. I could go on but you get the idea… yes I guess I could have a lot of things to complain about but I’m not. Even with all the unexpected surprises that life has tossed my way there is still so much to be thankful for!

The amount of weather related grumbling I’ve been hearing in real life and online, it really drives the point home and it now makes me realize how I must have looked (years ago) to one of my older spiritual mentors on the occasion when I’d feel sorry for myself. She’d patiently listen to my tale of woe, give me some advice and at the end gently remind me to be thankful in all things. While part of me wanted to tell her she did not know what she was talking about, I did not dare to do so. For one thing, I was taught to treat others with respect and deep down I knew what she said was right. Reflecting back to our conversations so many years ago, I do think she’d be thrilled that I’ve pulled myself out of the whining pit and now see things differently. Being thankful (even when I did not think I should have any reason to be happy) has opened my eyes (and mind) to unexpected blessings and I’m so grateful to have such a wonderful spiritual mentor that through her example and prayers I’m sure made me look at certain aspects of my life differently.

My lenten resolve…

Today I had some mild cravings for some pasta. No not the raw veggie pasta that I’ve been making, but that traditional cooked pasta. Since I’m adamant about standing firm with my lenten commitment I made some raw pasta instead. Besides, eating traditional pasta would not have been a good idea with my candida issues. Tomorrow, I’ll have to post what I made, once my Nikon D80s battery has charged.  Oh, and I’ll be sure to post the scrumptious desert I made using frozen fruit!

Earlier this week, a coworker told me that we are getting more snow this Sunday. I’m so glad I didn’t do a lot of planting yet. I was holding off just in case…

I guess I should be tired of snow, but I’m not. I distinctly remember telling a few folks that I would not mind seeing snow one more time before the warm weather hits.

So, if you live in a warm climate and think that telling me how amazingly warm it is where you are, I won’t be envious. I truly do appreciate all seasons. Learning to give thanks, even when at times the situation didn’t seem pleasant has helped me in so many ways.  I will say that being thankful for snow, isn’t exactly hard. I do love the cold weather and yes… I love snow! But there are other aspects when the following verse was a challenge…

in everything give thanks; for this is God’s will for you in Christ Jesus.
I Thessalonians 5:18

So… giving thanks doesn’t mean only when things are going the way I like, does it? That verse tells me I should give thanks in EVERYTHING! Hmm… not always easy, is it? My life isn’t always bright and there are a few reasons I could think of to complain, but in doing so, I not only bring myself down (and whomever else is around me) and I’m not following Gods plans either now am I?

Applying the above verse to my own life has made me change the way I handle all issues and yes… I do find ways to be thankful even when things aren’t that great. Because if truly think about it,  there are many things that are going on in my life that cause me to be thankful, even during those tough times, and I know things could be a lot worse.

 

Simple Raw Salad; One of my favorite things…

My pledge to only drink  my freshly prepared juices and one raw meal per day for my  Lenten fast is going well. Actually it’s the first time I’ve ‘given up’ anything for Lent. Lent is something that I’m really not familiar with on a personal level. The Baptist churches (where I’ve been a member) did not celebrate many of the Christian holidays.

I must say that I’m enjoying the cleaner type of eating. My meals are high raw anyway, so the major change is just drinking juice. Well for years I’ve made an effort to juice daily, so that part has not changed and recently I came off my a 7 day juice cleanse, but even so… rotating between the two is not something I’ve done in a while, so my fast from everything that is cooked is still somewhat new since I have not done that in a while.

It used to be hard to grasp that I could feel better than I already do, but the healthier/cleaner you eat the better you are going to feel. Still… years ago that was hard for me to wrap my brain around since I only eat whole foods and processed foods is something that is not in my eating lifestyle.

Now that weather is slowly starting to get warm, although it does not feel like it today being in the low teens, I’m thinking about using my dehydrator to dry herbs  and some spices.

Simple Raw Salad

In keeping up with my simple raw meal, earlier this week, I decided to make the above raw salad; spinach, tomato, onion, yellow onion and some freshly ground spices. It was simple to make and I enjoyed slowly chewing every single bite.

The salad dressing is homemade. Have you ever checked at some of the ingredients in your store purchased salad dressing? Even your ‘healthy dressing’ doesn’t compare to the salad dressings you can make at home and and no it does not take a lot of time. I made this raw salad dressing in three minutes.

Juice Cleanse: Sunshine juice

I juice daily, I found that none of the store bought juice can compare to the freshly made juices I make at home. Freshly prepared juices have more nutrients since none are destroyed since it’s not pasteurized.

Last evening, when the winds were shaking our house, I made this juice.

Sunshine Juice

  • 10 apples
  • 2″ Ginger
  • 2 lemons

Directions

  1. Add all ingredients to juicer
  2. Juice, serve and enjoy

I was going to add a habañero pepper, but I chose not to do so. I’m currently sipping on the last cup of this sweetly delicious juice (to which I added one teaspoon of black seed oil) and I am about to juice pineapple in my Breville so I can take it to work. I don’t need additional stimulants to wake me up in the morning. I continually am boosting my health based on the foods I chose to consume. It goes without saying that a boost to my health, also means I’m enhancing my immune system. All the ingredients used helps your body fight off a variety of ailments. That’s always a good thing.
